A beautiful drop ~ rich and caramel, from Akita, Japan. This is made from what's knowns as hatahata, or sandfish or Arctoscopus japonicus.
Contains nothing but fermentation time, salt and the fish, relying on the enzymes in the fish guts to do the handy preservation work and the salt to keep it from going in the wrong direction.
Ingredients: Japanese sandfish, salt
