Why freeze your kefir?

Freezing milk kefir in ice cube trays is one of those brilliant simple solutions that makes daily probiotic intake effortless. Drop a few frozen kefir cubes into your morning smoothie and you've got instant creaminess, gut-healthy bacteria, and no need for regular ice that just waters things down. For those that don't really like the flavour of milk kefir this is perfect. Also if your milk kefir is getting on a bit - freeze it!

The best part? The bacteria don't die when frozen - they just go dormant. Freezing is actually how we preserve many bacterial cultures long-term. The cold halts their activity, but once thawed (or blended straight from frozen), they wake back up and remain viable. You're getting all the probiotic benefits of fresh kefir, just in a more convenient form.

The method couldn't be simpler:

  1. Pour fresh milk kefir into ice cube trays - we love Seed & Sprout's silicone trays with lids (they come in various sizes and the lids prevent freezer smells). Standard trays work too.
  2. Freeze for 4-6 hours until solid
  3. Pop out the cubes and transfer to a freezer bag or container if you want to free up your trays - or just leave them in the trays if they have lids on them.
  4. Label with the date - frozen kefir keeps beautifully for 2-3 months

Using your frozen kefir:

  • For smoothies: Add 2-4 cubes depending on the size of your tray - (roughly 60-120ml) per serve, also depending on how tangy you like it, you could start small
  • Blend straight from frozen - no need to thaw first
  • Works with any smoothie base: berries, banana, mango, greens, cacao - the slight tang of kefir complements sweet fruit beautifully

Why this works:

Lactic acid bacteria (the beneficial cultures in milk kefir) are remarkably hardy. They've evolved to survive harsh conditions - they can handle stomach acid, after all. Freezing simply slows their metabolism to near-zero. When temperatures rise again (whether from thawing or the friction heat of blending), the bacteria resume activity.

Pro tips:

  • Freeze kefir when it's at your preferred level of tartness - younger kefir (12-18 hours) is milder and sweeter; longer-fermented kefir (24+ hours) is tangier and more probiotic-rich
  • Kefir separates naturally when frozen and thawed - this is normal and harmless, the whey and curds just separate. Blending brings it back together

  • 3-4 milk kefir cubes
  • 1 banana
  • Large handful spinach
  • 1/2 cup mango (fresh or frozen)

Berry breakfast bowl:

  • 3 kefir cubes
  • 1 cup mixed berries (fresh or frozen)
  • 1 banana
  • 2 tablespoons oats

Chocolate protein smoothie:

  • 4 kefir cubes
  • 1 banana
  • 1 tablespoon raw cacao powder
