Your Fermentary Pastis Kit - Instruction

What You'll Need:

  • Your Fermentary Pastis spice mix
  • 1-4 litres of clear alcohol (vodka works perfectly in Australia)
  • A large jar or container for infusing
  • Strainer or cheesecloth
  • Bottles for storage

Instructions:

  1. Choose Your Alcohol: A clear alcohol is what we're after - but in Australia that's harder to get - so a cheap vodka is ideal for making pastis. The botanicals take over the neutral spirit anyway.
  2. Add Your Spice Mix: Use approximately 1 tablespoon of spice mix per litre of alcohol. Feel free to adjust to your taste preferences.
  3. Infuse: Let the spices steep in the alcohol for about one week at room temperature. Give it a gentle shake or stir every couple of days.
  4. Strain: Pour your pastis through a fine strainer or cheesecloth to remove the spices. You might want to sweeten this to your liking - we rely on the sweetness of the fennel and licorice to do that for us.
  5. Bottle & Store: Pour into clean bottles and store at room temperature.

To Serve: Pour a measure of your pastis into a glass, then add cold water (typically 5 parts water to 1 part pastis, but adjust to taste). Watch as it transforms into a beautiful cloudy, opalescent drink. Add ice and enjoy as it slowly melts and the flavours evolve.

Perfect for hot summer afternoons!

Vermouth Mix - how to infuse with our glorious jar of herbs

I first fell in love with vermouth culture in Barcelona - and then later in San Sebastián – where they take those late afternoon moments we'd normally expect to their own vermut hour - at 11am. While I wrote about vermouth in Wild Drinks, it wasn't until our most recent visit that I truly enjoyed it as 'my drink'.  There's something special about making your own artisan vermouth at home: the ritual of steeping botanicals in wine, the anticipation as flavours develop, and finally, that first sip of something you've crafted yourself. This kit brings that Spanish tradition to your kitchen, with our carefully balanced spice blend ready to transform an everyday wine into something extraordinary.
