Why We Made the Pouch

Milk kefir is one of the most powerful probiotic foods you can make at home, but let's be honest: maintaining live grains is a commitment. It's not hard, but it is continuous — a daily rhythm of straining, feeding and starting again. We know plenty of people who've fallen in love with milk kefir, then fallen off the wagon simply because life got busy.

So we built the Fermentary Milk Kefir Pouch to solve that problem. It's made the traditional way, with real milk kefir grains and quality milk — we use either How Now or Gippsland Jersey — slow-cultured until it's teeming with life. As far as we know, there's nothing else on the market made this way: with actual kefir grains, not a freeze-dried starter culture. It's the real thing, just without the daily grain-tending. You get all the benefits of home fermentation, on your own schedule.

Getting Started

  1. Give the pouch a gentle shake before opening — this redistributes the ' cultured goodness from kefir grains evenly through the liquid.
  2. Store it in the fridge and use within about 2 weeks of opening for the freshest flavour and highest potency.
  3. Give it a good shake each time before pouring, as natural separation is a sign of a truly live product.

Extending Your Pouch

Here's the trick that makes this pouch such good value: you can extend it.

Pour your pouch into a bottle - half full and top it up with fresh milk — for example, if you've used 500ml, add 500ml of fresh milk into the jar or bottle. Stir or give it a gentle shake, leave it out on the bench for 12–24 hours to re-culture, then pop it back in the fridge. If it's warm or you'd rather keep it in the fridge - it will continue to ferment in there too, just perhaps a bit slower. 

You can repeat this process for around five rotations before the culture starts to lose strength and it's time for a fresh pouch. Each rotation will taste slightly milder than a fresh batch, and the culturing time may need a small tweak depending on your kitchen's temperature — trust your tastebuds and adjust from there.

This means one pouch can comfortably keep your kitchen in milk kefir for weeks, not days.

Freezing Your Kefir

Milk kefir freezes well, which makes it brilliant for stocking up or slowing down when you're travelling or taking a break.

  • Freeze in the pouch
  • Thaw slowly in the fridge overnight rather than at room temperature.
  • Give it a really good shake once thawed — freezing can cause some separation, and the culture may be slightly less active than when fresh. It's still perfectly good to drink or use in recipes; just note it may not extend for as many rotations as a fresh pouch.

Flavouring Your Kefir

For a simple and quick flavouring - here are a few quick starting points:

  • Stir through a spoonful of fruit puree or jam
  • Blend with frozen berries for an instant smoothie
  • Add a dash of vanilla and a little honey or maple
  • I tend to get pretty 'add happy' and add  a frozen fruit plus cinnamon, maca powder, hemp seeds, moringa, raw cacao etc. See here for my fave at the moment. 

However you drink it, you're getting a living, traditionally cultured product — made the slow way, so you don't have to.
