Simple Spice Combinations

Easy way to flavour your kombucha or water kefir straight into the bottle.  Let sit and carbonate and infuse for at least 24 hours at room temperature, then when you've reached fizz and flavour you're happy with - refrigerate!

Warming Spice (beautiful for autumn/winter)

  • 2 tbsp maple syrup
  • 1/4 tsp cinnamon
  • Pinch of nutmeg
  • Per 500ml bottle

Chai Spice

  • 1 tbsp honey or sugar
  • 1 cinnamon stick (broken)
  • 2 cardamom pods (crushed)
  • 1 thin slice fresh ginger
  • Per 500ml bottle

Apple Pie

  • 1/4 cup apple juice (or 1/3 cup diced apple)
  • 1/4 tsp cinnamon
  • Tiny pinch nutmeg
  • 1 tsp maple syrup
  • Per 500ml bottle

QUICK NOTES:

  • Use clean, sealable bottles (swing-top or screw cap)
  • Leave 2-3cm headspace for carbonation
  • Ferment at room temperature, away from direct sunlight
  • "Burp" bottles daily to release pressure
  • Strain and refrigerate when you're happy with the flavour and fizz
  • Fresh or frozen fruit both work beautifully
