Ganko Tamari is naturally brewed in 200-year-old wooden kioke barrels using only Japanese-grown soybeans, koji, and sun-dried sea salt, then sealed with stones and left to mature through twelve complete seasonal cycles. These ancient barrels, carefully tended by nine generations of the Ito Shoten family, harbour the living microorganisms that give this tamari its distinctive character—a heritage you can taste in every drop.

The result is exceptional: a naturally gluten-free tamari with remarkable depth, rich and smooth on the palate with a clean, sharp finish that amplifies rather than overwhelms.
