Why Samoan Cacao Is a Fermented Food (And Very Good News For Your Gut)

Here's a fact that might change the way you'll eat chocolate forever - and maybe give you a free pass at a little bit a day: every bar of good dark chocolate you've ever loved started its life as a ferment. Long before it's smooth, snappable and sitting in your pantry life, cacao goes through a similar wild, microbe-driven transformation as our krauts, kefir and kimchi. Chocolate belongs in the fermented world — I think we all know that - just like coffee and tea. This is a ferment. 

Fermenting makes it edible

Freshly picked cacao pods don't taste like chocolate at all. Inside each pod, the beans are wrapped in a sweet, sticky white pulp that is intensely bitter and astringent on its own. To become chocolate, that pulp needs help — from exactly the kind of wild yeasts, lactic acid bacteria and acetic acid bacteria we talk about every day at The Fermentary. Over several days, this natural microbial community breaks down the pulp and works on the beans themselves, softening the bitterness and building the flavour precursors that roasting later turns into "chocolate" flavour. No fermentation? No chocolate — just bitter beans.

Samoa's Slow and Patient Approach

Samoan cacao is a beautiful example of this at its best. Much of it is the rare Samoan Trinitario variety, grown as part of small, often family-run farms rather than industrial plantations. What sets it apart is patience: Samoan beans are typically left to ferment for five to seven days — longer than beans from many other cacao-growing regions — before being sun-dried on mats for up to two weeks and, in many cases, roasted the traditional way over an open flame. That long, slow ferment followed by an unhurried dry gives Samoan cacao its distinctive depth and its smoky, complex character. It's the same principle we live by with our own ferments: good things take time, and the microbes deserve the runway to do their work properly.

So Why Does 70%+ Matter For Your Gut?

This is where it gets exciting from a gut-health point of view. The cocoa percentage on a block of chocolate tells you how much of the bar is actual cacao — the beans themselves — versus added sugar, milk and fat. The higher that number, the more of cacao's naturally occurring polyphenols make it into your body.

Polyphenols are the plant compounds behind a lot of chocolate's reputation as a "health food in disguise." Research is increasingly pointing to dark chocolate at 70% cocoa or higher as a genuine prebiotic — meaning it can feed and encourage the growth of beneficial gut bacteria, including species linked to a healthier, more diverse microbiome. Trials looking at daily servings of 70–85% chocolate have found shifts in gut bacterial diversity alongside knock-on benefits for mood, blood vessel function and inflammation markers. Once you drop below that 70% mark, sugar and milk solids start crowding out the cacao — and with it, much of the benefit.

It's a lovely parallel to everything else in our fridge: just as our sauerkraut and kefir feed the good bugs in your gut directly, a well-made high-percentage dark chocolate is quietly doing some of the same work — polyphenols acting almost like a prebiotic snack for your resident microbes.

A Fermented Full Circle

We talk a lot about wild and living ferments here (obviously) - we need and ask for trust, time and a bit of wonder at what microbes can do with almost nothing. Samoan cacao asks for exactly the same thing. A slow week-long ferment on a small Pacific farm, a careful sun-dry, a traditional roast — and out the other end comes something that's not just delicious, but genuinely good for your gut. 

So next time you reach for a square of good, dark, 70%+ chocolate, you're not cheating on your ferments. You're having another one.
