Fruit & Herb Combinations 2nd Ferment
Raspberry & Basil
- 1/4 cup fresh or frozen raspberries
- 2-3 fresh basil leaves, torn
- Per 500ml bottle, ferment 2-3 days
Peach & Thyme
- 1/3 cup diced peach (fresh or frozen)
- 1 sprig fresh thyme
- Per 500ml bottle, ferment 2-3 days
Pineapple & Mint
- 1/4 cup fresh pineapple chunks
- 3-4 mint leaves
- Per 500ml bottle, ferment 1-2 days (pineapple ferments quickly!)
Strawberry & Lavender
- 1/4 cup sliced strawberries
- 1/4 tsp dried culinary lavender (or 1 small fresh sprig)
- Per 500ml bottle, ferment 2-3 days
QUICK NOTES:
- Use clean, sealable bottles (swing-top or screw cap)
- Leave 2-3cm headspace for carbonation
- Ferment at room temperature, away from direct sunlight
- "Burp" bottles daily to release pressure
- Strain and refrigerate when you're happy with the flavour and fizz
- Fresh or frozen fruit both work beautifully
