Fruit & Herb Combinations 2nd Ferment

Raspberry & Basil

  • 1/4 cup fresh or frozen raspberries
  • 2-3 fresh basil leaves, torn
  • Per 500ml bottle, ferment 2-3 days

Peach & Thyme

  • 1/3 cup diced peach (fresh or frozen)
  • 1 sprig fresh thyme
  • Per 500ml bottle, ferment 2-3 days

Pineapple & Mint

  • 1/4 cup fresh pineapple chunks
  • 3-4 mint leaves
  • Per 500ml bottle, ferment 1-2 days (pineapple ferments quickly!)

Strawberry & Lavender

  • 1/4 cup sliced strawberries
  • 1/4 tsp dried culinary lavender (or 1 small fresh sprig)
  • Per 500ml bottle, ferment 2-3 days

QUICK NOTES:

  • Use clean, sealable bottles (swing-top or screw cap)
  • Leave 2-3cm headspace for carbonation
  • Ferment at room temperature, away from direct sunlight
  • "Burp" bottles daily to release pressure
  • Strain and refrigerate when you're happy with the flavour and fizz
  • Fresh or frozen fruit both work beautifully
