How to Use Your Water Kefir Pouch
Water kefir is bubbly, refreshing, a creative and fun thing to flavour — not to mention using all of the different ways you can utilise left overs or frozen fruits, leaves and herbs. This pouch means you can dive straight into the fun part without tending grains every day.
Storing Your Pouch
No rush here. Simply pop your pouch in the fridge and it will keep well for up to 6 weeks, ready whenever you feel like flavouring a batch. This makes it brilliant for having on hand for whenever the mood — or the weather — strikes. Don't forget you can also flavour a batch and freeze them into icy poles or blocks for smoothies and juices.
Flavouring Your Water Kefir
This is where the magic happens. It can be as easy as adding a splash of syrup. You can make your own syrups of course - but you can also just experiment.
- Choose a wide-mouth bottle. This makes it much easier to add fruit, herbs or other flavourings, and just as easy to fish them back out again afterwards.
- Add your flavourings. A simple fruit syrup is the easiest place to start, but don't stop there — fresh or frozen fruit, herbs, ginger, citrus peel and spices all work beautifully. This is also where you can get creative and layer flavours for something a little more complex — think raspberry and mint, or ginger and lime.
- Leave it to flavour for 24–28 hours at room temperature. This second ferment is what builds the fizz and infuses the flavour right through.
- Strain or leave it as is. Once it's done, you can strain out the fruit and refrigerate the liquid, or simply leave the fruit in the bottle and pop the whole thing in the fridge — either way works.

Not sure where to start? Here are a few of our favourite pairings to try — and remember, this is where you can really play, layering flavours for something your own. The idea is to add a little touch of sugar so the cultures in the Kefir will eat that up and make fizz! Too much sweet and you'll get too much fizz! Be careful here. For gentlest results use herbs and citrus or low sugar options like limes and lemons.

Freezing Your Water Kefir
Water kefir can be frozen, but we'd always recommend flavouring it first — that's where the real flavour and fun lives. Once it's flavoured, freeze it into icy poles rather than freezing the plain liquid. This gives you all that layered flavour in a cold, fizzy treat, and it's a wonderful (and sneaky-healthy) way to use up a batch, especially in the warmer months.
However you flavour, store or freeze it, you're getting a living, traditionally cultured drink — made the slow way, so all you have to do is have fun with it.
