How to make Pastis with our gorgeous blend of herbs

Your Fermentary Pastis spice mix

1-4 litres of clear alcohol (vodka works perfectly in Australia)

A large jar or container for infusing

Strainer or cheesecloth

Bottles for storage
Directions
- Choose Your Alcohol:Â A clear alcohol is what we're after - but in Australia that's harder to get - so a cheap vodka is ideal for making pastis. The botanicals take over the neutral spirit anyway.Â
- Add Your Spice Mix:Â Use approximately 1 tablespoon of spice mix per litre of alcohol. Feel free to adjust to your taste preferences.
- Infuse:Â Let the spices steep in the alcohol for about one week at room temperature. Give it a gentle shake or stir every couple of days.
- Strain:Â Pour your pastis through a fine strainer or cheesecloth to remove the spices. You might want to sweeten this to your liking - we rely on the sweetness of the fennel and licorice to do that for us.Â
- Bottle & Store:Â Pour into clean bottles and store at room temperature.
To Serve:Â Pour a measure of your pastis into a glass, then add cold water (typically 5 parts water to 1 part pastis, but adjust to taste). Watch as it transforms into a beautiful cloudy, opalescent drink. Add ice and enjoy as it slowly melts and the flavours evolve.
