Rice, soy beans, black beans - pea's and lentils are all staples and used heavily around the world in fermentation. They become more digestible, and frankly more delicious upon fermentation. Nattō is one of my first loves and is soon to take the world by storm. Here we have miso and rice koji in a kit for you to make your own miso.
