Kaiseki dinner designed by Holly Davis, with chef Roger Fowler and Vicky Symington. Paired sake by Melissa Mills from Sake Connect, and Japanese beers by Kirrily Waldhorn of Beer Diva fame.
Kaiseki Dinner with international guests Nancy Singleton Hachisu and Terada Masaru. The evening will feature many Japanese ferments made on site and from Japan. Enjoy our version of Kaiseki in a relaxed setting at Longhouse - a relaxed exploration of all that we love from Japan, slow food and ferments.
Kaiseki is a traditional multi-course Japanese dinner, focusing on traditional technique and seasonality - Japanese principle of shun, taking ingredients at the peak of their freshness and using a collection of skills and techniques served in a certain order.
This is part of the broader Hakkō festival.
