Well, 4 of our fave ‘K’ words are Kraut, Kefir, Kimchi & Kvass.  We have made that into a bag pronouncing this deep love, and with this workshop you can come to The Fermentary HQ and learn all the K ways (& of course take home one of these Bags!)

This is kind of a Fermenting ‘101’ class, where you will learn about salt, different preserving techniques, two of the most popular cabbage recipes (Kraut & Kimchi), a Wild Drink (Kvass), and all about SCOBY’s (Symbiotic Cultures of Bacteria & Yeasts) with Milk Kefir.

Whether you are a beginner or someone who has been fermenting for years, this course would be of benefit.  Sharon will delve into the history of Fermenting and all the techniques for the recipes listed and how to modify and adapt them further.

You will come away with a head full of ideas, a big bag of goodies to enjoy straight away and continue to ferment as well as a solid base for exploring further.  She will offer plenty of opportunities to ask questions and advise on any areas for trouble shooting.

Kraut is one of the most well-known fermented foods, and a brilliant building block to get you off and running on your fermenting journey.  You will gain a deep understanding of how fermentation works, the way salt is used to preserve cabbage and turn it into a gut loving taste bomb that will keep for months and months to enjoy any way you like.

Kimchi is arguably Korea’s most famous food and rightly so.  We are obsessed with it here and have even won awards for ours.  In this course, you will make your very own Kimchi to take home, and of course, get our coveted recipe.

Kvass is a fermented drink, popular since time began (basically) in huge swathes of Eastern Europe.  In this workshop, we will make Beet Kvass, which is a delicious, slightly sour, effervescent drink.  So easy to make and a great starting point for other wild drinks.

One of our favourite SCOBY’s, Milk Kefir is brimming with good bacteria for your gut.  It’s simple to slot it into your life in its purest form, but is also very adaptable to loads of other recipes.

You will take home everything you make during the course, all the recipes including jars and airlocks.  Lunch will be provided as well as one of our beautiful Water Kefir’s.

In case of another Covid-19 lockdown, we will be able to host the workshop on Zoom and send you all the ingredients and materials.
