Our most popular flavour is the Fig and Ginger, but coming in second is the simple Raspberry and Lime. We particularly love our extra seasonal flavours that are served in restaurants and cafe's by the glass or picked up on order from us in Daylesford or Fitzroy. Our Water Kefir is made from a large family of water kefir SCOBYs. (Symbiotic Colony of Bacteria and Yeast) See the picture of the SCOBY in my hands on the right? We care for our kefir grains like family members - these are living beings that require love and some serious care. The word 'grain' is used to describe their shape and doesn't have any further relationship to grains. So YES! water kefir is gluten free. :)
Our kefir is fermented in stainless steel vats in a temperature controlled room for 48 hours, and fed the best organic raw sugar and the crispest, spring water sourced very close to The Fermentary in Daylesford. It eats 97% of that sugar so you are left with a gently sour, slightly fizzy drink.
Always tip your bottle gently to mix in the sediment, and open with care. Sometimes you might get a bottle that is less fizzy than the last - you can pop it on the bench for the night and see how it is in the morning. SImple. That picture of Roger shaking a bottle to get it to explode is him showing off and enjoying the miracle that fermentation is. You don't want to waste it like that so ALWAYS keep this refrigerated and don't shake it. Avoid buying it and then leaving it in your hot car for 3 hours. As soon as it's out of the fridge it can start fermenting again. There's a touch of alcohol in fermented drinks like this - due to the natural fermentation process - and while at the time of bottling it's about .5%, it can increase so be aware of that. Enjoy.
Kefir makes the most out of anything we put into it. The natural anti-oxidents bring out the colours of any berries - often our Raspberry Kefir looks FAKE. It's not. I love the look of the hot pink raspberry kefir even if Roger doesn't.
